Banana Bread recipe without eggs. This banana bread is a dense cake made from ripe bananas and without eggs. It is perfect as a breakfast or a tea time cake.

This time, my weekend has begun, unlike last week when I had to work a Saturday to make up for an unexpected holiday. I wish every night could be a Friday night when I get to lie down on the sofa and watch TV all night. I rarely cook elaborate meals on Friday night. Bare minimum to stop me from being hungry. So it is usually some kind of pressure cooker rice dish like Mint Pulao or Vangi Bhaat. I don’t like doing dishes either on Friday nights.

This week though, I have an added treat to my Friday night. We bought these large bananas on Sunday that were starting to go all black on the outside and ripe on the inside. I felt my whole house had begun smelling bananas. Usually, overripe banana means making Mangalore Banana Buns for me. But this time, I tried a new way of using them up in this zero effort Banana Bread. It takes like 10 minutes to whip up the batter and then just put it in the oven and allow it to cook while you continue with your other work.

This Banana Bread is dense and moist as any good banana bread is meant to be. It is perfect to eat at tea time as isn’t too sweet. I pretty much ate it for tea, snacks and dessert. So there isn’t a time when it isn’t the right time to eat this Banana Bread.

The Banana Bread has a slight hint of vanilla. I used condensed milk to add liquidity and sugar, and hence did not use sugar in the bread. If you want to skip the condensed milk, just use more of regular milk and sugar. You can also add maple syrup instead.

If you have never baked a cake in your life, then I’d suggest starting out with this Banana Bread, it is a no fail and zero effort recipe.

Baking powder & Baking Soda: Be sure that your baking powder and baking soda are not past their expiry dates. These both work with apple cider vinegar as an egg substitute so they must be in date. This is how to check if your leaveners are still good to use.

Granulated sugar: You can use either golden or white granulated sugar. I prefer to use golden sugar as it offers a slightly deeper caramel flavor to pair with the banana.

Extra virgin olive oil: A good quality extra virgin olive oil with provide your cake with the best result in terms of flavor and texture.

Pure maple syrup: Brush a layer of maple syrup over your finished baked cake as the icing component. It’s simple yet delicious, especially paired with a banana cake.

Step four: Add in mashed banana, milk, oil, vinegar, and vanilla. Gently fold with a spatula until well combined, ensuring not to over-mix, just ensure there are no large pockets of flour remaining in the batter.

Step six: Transfer to oven and bake for 40-45 minutes, until a toothpick inserted into the middle comes out clean and it’s lightly golden on top and looks set. Remove from the oven and allow the cake to cool in the pan for 15 minutes. Transfer to a wire rack to cool completely.

Step seven: Once cooled, pour maple syrup into a small bowl and take a pastry brush and brush a layer or desired amount of syrup over the cake. Serve and enjoy!

Ripe bananas work best, try not to use green-tinged bananas as they’re too hard to mash and do not provide adequate flavor for this cake. 

Store in an airtight container, in a dry dark pantry for 1-2 days then transfer to the refrigerator for a further 1-2 days to keep it fresh. Banana cakes do not last a long time and are best consumed freshly baked and a few days after.

What really irks me is when people take the cake and then simply proceed to tell you how they have had better, their wife makes a nicer one or they don’t really like one of the key ingredients (banana-less banana cake, anyone?)

They will want to call it ‘honesty’, but that’s just plain rude, in my opinion! Someone made this cake with love and care and they really hoped you would enjoy it or else they wouldn’t give it to you. If for whatever reason it’s not quite to your taste, fair enough, but have a bit of consideration for them. You are not a Masterchef judge! Get over yourself!

This mini-rant is based on a real life experience that has recently left me puzzled. And the funny thing is that these are usually the same people who would not be able to handle it if you were to be honest in return. I think we have probably all come across that type of person before…
