Crockpot Potatoes are our favorite easy side dish recipe! We made these slow cooker potatoes two ways: Garlic Ranch and Taco seasoned. My mind is blown by how simple making crockpot red potatoes can be…and the sky is the limit with flavors. This recipe is one of our favorite crockpot side dishes to make for any meal.

This is one of my favorite crockpot side dishes, mostly because you get two-for-one here. Both flavors are so good. Both start with red potatoes, then just add different ingredients to get the flavor you love.

The great thing about these potatoes is they both start with the same ingredients– butter, oil, salt, and pepper. From there, you can add just about anything to make them the perfect side dish for any meal. Some of my favorite seasoning blends to add to these potatoes are Creole seasoning, blackened seasoning, chili seasoning, everything bagel seasoning, Italian seasoning, or herbs de Provence.

Easy Slow Cooker Cheesy Potatoes Recipe

For this recipe, you’ll need to cook the potatoes for about 3-4 hours on high. You want them to be fork-tender, so check them every hour or so.

Yes, you can use any type of potato, but some varieties work better than others. I find that waxier potatoes hold up better to the long cooking time, so try Yukon Gold, new potatoes, or fingerlings. Russets are delicious, but they will likely fall apart.

It’s up to you! If you prefer peeled potatoes, then peel them before cooking. But leaving the skins on can add texture and flavor to your dish. Plus, if you’re feeling lazy like me, it cuts down on the prep time!

Store leftover potatoes in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave in 30-second increments until warmed through.

The great thing about these slow cooker potatoes is that they go with just about everything. Some favorites include our Sheet Pan Chicken Parmesan, Chicken Burgers, Stovetop Burgers, Oven Fried Chicken, or Easy Chicken Cordon Bleu. What kind of sausage should you use for this recipe? We list mild Italian sausage in the recipe card, but for the most part, the various types of Italian sausage are defined by the seasonings used in each type. Sweet Italian sausage is the mildest form and is seasoned with fennel, anise, and sweet basil. Mild Italian sausage has fennel and sometimes oregano. Hot sausage has fennel plus red pepper flakes added in. And surprisingly, country-style (breakfast) sausage is very similar but swaps out the fennel for sage. So if you have a flavor preference, let that guide your sausage choice. The most important thing to remember that Italian sausage for this recipe should be fresh, not smoked (like Kielbasa-type sausages).

These slow cooker cheesy potatoes couldn’t be easier! All you have to do is brown the sausage and onions and then add them, the thinly sliced potatoes, seasonings, and beef broth to the crockpot.

Once cooked, you can add as much cheese as you desire! Feel free to mix cheese varieties, but stick with freshly grated cheese to avoid the waxy/cornstarch coating that comes on most bags of pre-shredded cheese.

I’ve been a fan of making potatoes in the slow cooker since I first made these Crock Pot Baked Potatoes, and these overnight crockpot breakfast potatoes might be even better. Essentially a slow cooker version of home fries, these crockpot breakfast potatoes have all the necessary components of classic breakfast potatoes:

But the thing I love the most about the overnight breakfast potatoes is what they lack: the need to stand at the stove and babysit.

After a few hours, these crockpot breakfast potatoes will be perfectly tender and creamy, no stirring required. You can enjoy them hot right out of the slow cooker as a side or top them with a fried egg to turn them into a hash, which is how I ate them for lunch.

These crockpot breakfast potatoes are especially effective if you are hosting a party, because the slow cooker completely frees up your stove and oven, and guests can help themselves throughout the day. If you are a guest, it’s also a considerate recipe, because your host won’t need to do anything but clear a little counter space.
