Bread Recipes With Basil

This bread, besides being pretty darn stunning, is soft, garlicky, cheesy, and tasty. It will kind of remind you of the flavors of pizza in a soft bread.

This bread is delicious warm from the oven as well as at room temperature. It's soft and flavorful, and delicious dipped in hot tomato sauce or seasoned olive oil.

This is the winning recipe for the 2009 (the first ever)National Festival of Breads, a contest for American amateur bread bakers. It's also featured in King Arthur Baking.

Tomato, Basil, & Garlic Filled Bread (pane Bianco)

The loaf is stuffed with sun dried tomatoes, cheese, garlic, and basil. It's rolled up, cut open on top withscissors, and then formed into an S.

First, roll the dough out into a 22 inch by 8 inch rectangle and sprinkle it with drained sun dried tomatoes, chopped basil, and a mixture of cheeses tossed with chopped garlic.

For the cheeses, I used a combination Gruyère, mozzarella, and provolone. I've also made the bread with just mozzarella and Parmesan cheese. You can also use a store-bought Italian blend shredded cheese. I just happened to have some small bits of provolone and Gruyère in the cheese drawer that I needed to use.

Once you've sprinkled the filling over the dough, roll it up tightly into a long rope and lay it across a parchment lined baking sheet. Next, using kitchen shears, cut the rope lengthwise about 1 inch deep.

This bread is delicious warm or at room temperature. It's great served with a pasta dinner or as a snack dipped in warm pizza sauce or olive oil and balsamic vinegar.

Be sure to keep an eye on the loaf when it's in the oven so that you can tent it with foil when it is golden brown, about the 25 to 30 minute mark.

But sometimes it’s nice to shake things up a bit and make something different. Enjoy this Tomato Basil Bread with pasta, or use it to make a grilled cheese sandwich. Yum!

In a large bowl, dissolve ⅛ teaspoon of sugar in the water and sprinkle the yeast on top. Stir and then let rest until foamy, about 5 minutes.(If you have a stand mixer, do this in the bowl of your stand mixer).

Add the basil to the yeast mixture, plus 3 cups of flour along with the remaining sugar, salt, well-drained tomatoes and olive oil. Stir vigorously to form a dough, adding remaining flour as needed until dough comes together and isn’t so sticky. (If you have a stand mixer, add these ingredients to the bowl and let the dough hook do the mixing. Then you can let the dough hook do the kneading for 5 to 10 minutes. Add basil and knead until smooth and elastic. Skip to step 5).

Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 5 to 10 minutes. Sprinkle the dough with the basil and incorporate as you knead.

Lightly oil a large bowl. Place the dough inside, turning it over in the oil, and cover with a clean dish towel. Allow the dough to rise for 1 hour in a warm place.

Return the dough to the floured surface and punch it down. Shape into a 9×5-inch loaf. (You can either shape it freeform and place it on a parchment-lined baking sheet, or place it into a greased loaf pan.) Cover with the dish towel and put loaf in warm place to rise for another hour.

Preheat the oven to 425°F. Bake for 25 to 35 minutes, or until hollow sounding when tapped. Cool on a wire rack

Note: we opted to bake this version of tomato basil bread in a loaf pan. That makes it turn out more like a sandwich loaf, and it’s easy to slice for sandwiches. If you prefer, you can shape it into a round and bake it that way. If you do this, it’s more functional to use it for serving with pasta and salad.

Little flecks of fresh basil and plenty of tomato flavor make this bread quite unique. I think you’ll be happy with the results. Enjoy!

You might be thinking this loaf doesn’t look like it was made in a bread machine. The secret is to use the DOUGH cycle to mix and knead the dough. (I call it “using a bread machine for what it does best.”) Remove the dough from the machine, shape it by hand for the best texture, then bake it in the oven for the best crust—no more cardboard crusts with holes in the bottom and weirdly shaped loaves.

Recently, one of my readers requested a bread recipe with sundried tomatoes to make in her bread machine. I suspect she had previous taste experience (Panera bread, maybe?). Of course, the first step was figuring out exactly what kind of bread we wanted. Would it be rustic, enriched, or sandwich bread?

Mozzarella And Basil Bread

Once we narrowed down the type of bread, I tossed out the enriched recipes (containing eggs, milk, and lots of fat) and anything having a starter or sponge. This recipe would be for a sturdy sandwich bread with off-the-scale sundried tomato and basil flavor. I didn’t want the bread to require advanced planning, such as a starter or sponge demand.

Since many of you ask for more whole grains in your bread recipes, I added some whole wheat flour but not a lot. I didn’t want this to be a heavy loaf.

I decided against adding cheese. But you could certainly add some Parmesan cheese or shredded Mozzarella if you desire. (I would start with about 1/2 cup of shredded cheese.)

My reader asked for sun-dried tomatoes. Got it! However, I wanted even more color and tomato flavor. I tried tomato paste. Not only is it easy to find, but it’s also easy to use.

I love adding spices to bread (something you don’t find too much in the bread aisle at the supermarket), so I went with dried garlic, dried basil, and dried minced onion. I could have used fresh onions, but that would complicate the recipe considerably because of the extra moisture.

Try making toasted cheese sandwiches with this bread. It makes the best sandwiches. I used Joanna Gaines’ pimento cheese recipe to fill these sandwiches. She suggested adding bacon–a fabulous idea!

Add all of the ingredients into a bread machine pan in the order listed in the recipe. Choose the DOUGH cycle and press START.

When you first turn on the machine, you may have some fairly stiff dough. But don’t add extra liquid until the dough can come together and knead a bit.

This dough looks perfect. When the machine runs, the dough will stick to the sides, then pull away cleanly. Eventually, the dough should turn into a smooth and shiny mass.

Check the rise with the two-finger method. Use two floury fingers to gently punch holes into the dough, then pull your fingers back out. If the holes fill in quickly, you probably need to let the dough rise longer.

If the holes fill in slowly, your dough is perfect. The dough is over-proofed if the holes don’t fill in at all. Proceed to the next step.
