When traveling, we often enjoy Starbucks Blueberry Muffins for a breakfast treat. I decided to try to come up with a copycat version and we think these are even better. All of our taste-testers agree!

You probably have pretty much everything you need to make these Better than Starbucks Blueberry muffins. Besides blueberries, the ingredients for these muffins are common household staples; flour, sugar, butter, eggs, buttermilk, baking powder and soda and salt.
I tried some recipes calling for oil and some for butter and found that butter gave the muffins better flavor and a nice crumb texture. The butter is melted in this recipe so you don't have to worry about taking it out of the fridge ahead of time to soften.
Buttermilk owes its success as a baking ingredient to its acidity. It’s not nearly as sour as lemon juice or vinegar, of course, but the milder lactic acid present in buttermilk makes it a real boon to bakers. A slightly acidic batter helps keep baked goods moist and tender by breaking down long, tough strands of gluten.

Its tartness adds a delicious but subtle tang to cakes and pastries and its thick consistency adds a rich, creamy quality to baked goods. The acid in buttermilk helps with leavening. Together with baking soda, it produces carbon dioxide, which why pancakes and other baked goods made with buttermilk rise much higher than those with regular cow's milk.

Several of the recipes I tried while working on these Better than Starbucks Muffins were good, but not so pretty. I love a muffin with a rounded, domed top in lieu of those that rise up, but then flatten and spill over the sides of the muffin cups.

Dairy Free Blueberry Muffins
Step 2: Mix the oat milk, vegan melted butter, purecane sugar substitute (or regular sugar), baking powder, vanilla and baking soda together. Then, add the flour and mix until a thick batter forms. Fold in the blueberries.
Step 3: Line about 12 muffin wells with paper liners. Spoon the batter into the muffin wells until they are about ⅔ full. Bake in the oven for 25-30 minutes or until the muffins have completely risen and are golden on the tops.
Step 4: Enjoy warm, spread with vegan butter. These vegan copycat Starbucks blueberry muffins store well in an airtight container at room temperature. They will be about 145 calories each if you use purecane, or 192 calories each if using regular cane sugar. Compared to Starbucks (coming in at 330 calories), both options are a calorie steal!

I wanted to make these muffins as close to bakery muffins as possible. To do this, I made these into jumbo muffins instead of regular-sized muffins. I used a jumbo muffin pan like this one that I purchased on Amazon.
I also used these brown tulip-styled paper liners to line the muffin cups for my muffins. I think that tulip liners give muffins a lovely bakery-style aesthetic and make them look so pretty! This is optional, however, and you can use any style of muffin liner you prefer.
Another thing that I did to make these muffins extra tall and fluffy, is to fill the muffin cups to the top with muffin batter. I also topped them with extra blueberries to make them even juicier and with raw cane sugar to give the muffins a delicious and sweet crinkly top.

For this recipe, I definitely recommend using fresh blueberries over frozen ones. Frozen blueberries are incredible in baking, and so much cheaper than fresh. However, I've found that when I actually used frozen blueberries in this recipe, the purple color from the blueberries bleeds into the batter and I ended up with blue blueberry muffins. This is not necessarily bad, and the taste is still just as incredible! But I do much prefer the light golden
