Sweet Potato Muffin Recipe Healthy

Gluten-Free Sweet Potato Muffins (with cranberry sauce inside, too – perfect fall breakfast!) topped with a brown sugar-nut topping. So moist & delicious! This recipe post was created as part of the NOW Foods Holiday Smart Swap Recipe Challenge.

Last year for Thanksgiving, my family drove over to Utah to visit family. We shopped, snowboarded (that was not successful, but a whole other story…) and ate Thanksgiving dinner with my husband’s family.

The day after Thanksgiving, my mother in law whipped up some of the moistest muffins I’ve ever had. I was shocked when she told me they had mashed sweet potatoes mixed inside! I forced her to share the recipe with me. đŸ˜‰

Cinnamon Sweet Potato Muffins

But question first, have you ever made anything with gluten free flour? I have to admit I’ve attempted gluten free tortillas and they were not good. Like, throw away bad. It sort of made me not excited about gluten free baking.

But then I was introduced to Living Now products . Have you ever tried their gluten-free all-purpose flour? It’s really amazing. It measures cup for cup like regular all-purpose flour but is gluten free, dairy free, wheat free, soy free, nut free and egg free. Pretty awesome if you have food allergies.

So I changed up my MIL’s recipe a bit. I swapped out the all-purpose flour for Living Now Gluten-Free Flour, swapped out the sugar for some Stevia (can use Truvia Baking Blend or Now Foods Sugarless Sugar), and added a yummy brown sugar & pecan topping using Now Foods Honey Roasted Pecans – which by the way are so so good. We ate almost the entire bag in one day just from snacking on them.

Chocolate Sweet Potato Muffins

These sweet potato muffins were a hit with my boys. You can’ttell they’re gluten free! They’re moist and have such a great flavor. Adding sweet potatoes makes them so soft and the cranberry saucegives them an extra burst of flavor. Plus, they’re great for after the Thanksgiving holdiday when you always seem to have leftover sweet potatoes and cranberry sauce sitting around!

If you haven’t noticed by now, one of my favorite hobbies is sneaking veggies into my baked goods. It brings me so much joy because most of the time no one even knows there are veggies in there. Zucchini? I got it into brownies, muffins, and bread.

These muffins are the best muffin recipe on this blog because they are so incredibly fluffy and soft. Many gluten free muffin recipes can be dense and heavy but the oatmeal in these muffins is what causes them to be extremely light and fluffy. Trust us on this one.

One of the best parts is that leftover roasted sweet potatoes made this recipe come together in no time. It also no longer leaves you wondering what to do with all of those leftover sweet potatoes after Thanksgiving!

First of, sweet potatoes are a nutrition powerhouse. They are packed with beta-carotene which helps with vision and is converted in Vitamin A in the body. They also are an incredible source of fiber, which let’s be honest, we always can use a little extra fiber in our diets.

Gluten

Not only are they gluten free (if you use certified gluten free oats or oat flour), but they are made with healthy fats from coconut oil, natural sweetener from the maple syrup, and protein from the eggs.

These sweet potato muffins are so easy to make. You’ll want to start by making homemade oat flour which is way easier than it sounds. No fancy mills or grinding machines here, all you need is a blender!

Almond Butter Sweet Potato Muffins

Just throw some oats into a blender and pulse for 10 seconds or so until your oats are finely ground into a flour. Always measure the amount of oats that you need after you’ve ground your oats up because the measurement can change.

Add the dry ingredients into the wet ingredients and stir until completely combined. Then add in any mix-ins you want! I love adding in chocolate chips or pecans into my sweet potato muffins. I even save some to put on top!

Pour batter into a lined and greased muffin tin, top with a little extra chocolate and crushed nuts if desired and bake!

Dairy Free Sweet Potato Muffins Recipe (from A Louisianna Restaurant)

Yes, you can freeze sweet potato muffins! Meal prep these ahead of time. Then stick in the freezer and pull them out as needed. Perfect for busy people.

Individually wrap each muffin in saran wrap for easy take out, or just place them all in an air tight container. Let defrost on the counter until you are ready to eat and they completely thaw (about one hour).

I personally love mine slightly warmed up and topped with drippy nut butter. These healthy muffins are also the perfect lunch box side for kids and grown ups alike.

This silicone muffin pan. Muffins pop right out and it makes clean-up a breeze ! You don’t have to pre-grease this silicone muffin pan either, I can’t tell you the number of times I forget to grease my pans. I also use this silicone muffin pan to make my Baked Egg Cups.

Double the recipe to build up your freezer-stash. I’m a huge advocate of doubling the recipe and hiding half away in the freezer for those busy weeks when meal prep isn’t feasible. I wrap groups of 4-6 muffins in aluminum foil and place them in a freezer bag to store in the freezer for up to 3 months.

Low Fat Sweet Potato Muffins

When I’m making these for freezer meal prep I often add 1/2-1 c shredded carrots; shredded in a food processor. Not only is this a sneaky way to add more veggies, but it adds more moisture to the muffins so they don’t dry out in the freezer. You may need to cook the muffins a bit longer when adding shredded carrots.

The base of this recipe is VERY forgiving — which means you can play around with it! You can easily substitute canned pumpkin or butternut squash puree instead of the sweet potato puree! Making these healthy pumpkin muffins or squash muffins.

I always make 1/2 a batch with chocolate chips, and 1/2 a batch without. We like to eat the muffins without chocolate chips for breakfast and save the muffins with chocolate chips for snacks.

Note, you do not need a food processor to make this recipe. But a food processor does come in handy if you need to grind oats in oat flour or add shredded carrots; but a high-speed blender works great as well.
